Stuffed Lauki

I know I know you might wonder how come I have made my new recipe post here. You know I am not able to make up my mind in blogspot purely because of the image size restrictions. The image gets cropped to a certain size itself unless I calculate it manually which I google’d and found on the web and change some html. I hate doing that every time. If there is any other way, I would love to know about it and welcome your suggestions. Having said that, have you ever had entire roasted lauki (doodhi) stuffed with yummy potato & spices? Here is an entirely new recipe for you to try and I promise that it tastes too good.


Whole roasted lauki with aloo stuffing

Recipe: (for 4 people)

1 medium size lauki
4 medium size aloo
1 medium onion
1 tsp of ginger garlic paste
Red chili powder as per taste
2 tsp dhania powder
1 tsp garam masala powder (optional)
1 tsp amchur powder
1 green chili finely chopped or per taste
Salt per taste
3 tsp oil

Peel the skin of lauki. Cut away the ends and then insert a knife. Go around and scoop out the center for stuffing and save it. Follow the same procedure on the other end also until the entire center is scooped so that the lauki looks hollow like a cylinder. Blanch the whole lauki in hot water for a few minutes until a little tender. Boil and mash aloo. In a pan add 2 tsp oil and add the onions, ginger garlic paste and saute. Add the scooped out lauki, sprinkle some water, cover it with a lid and let it cook. then add the aloo and spices and mix all well together. Let it cool and then stuff this filling inside the lauki. In a non-stick pan add the remaining oil and place this stuffed lauki, cover it with a lid making sure you turn it every side after crisping and when the skin turns golden brown. You can also bake it in the oven. Slice it and enjoy it with roti.

    Priya, I just love this dish. The idea of a lauki stuffed with aloo sounds perfectly mouthwatering. I am always buying bottle gourd but once I get it home I usually end up making the same old subzi. I have to try it this way the next time. Beautiful.

    Hi tried this recipe today and my first attempt with lauki. But I have a question, scooped out lauki is just seeds right? Plz don’t mind if this question is silly 🙂

    Also, the skin was a bit hard for me to scrap/peel.Is that normal or my lauki is matured?

      Riya, Glad that you tried the recipe. The skin can be peeled by a knife. Yes it is a little thick, so run your knife to peel the skin until you see the white flesh. As for as scooping is concerned, just scoop enough so that there is room to stuff. And no, it’s not a silly question by any means. I am sorry that I was not so clear in my recipe post. Will try to do a better job. btw, your name is one letter short of mine 🙂
