Cherry Tomatoes with Herbs

Pop in your mouth for a fresh taste ~ Cherry Tomatoes with Herbs

Tomatoes are in season and I love to plant at least one tomato plant in my backyard every summer. This summer I planted cherry tomatoes and they are growing wild. I plucked some bright, red color ripened tomatoes and the smell of the tomatoes stuck to my fingers for a while; so fresh. My father-in-law mentioned about a recipe with cherry tomatoes that he had at least a couple of decades ago somewhere abroad. He still seems to remember it quiet well and was describing how juicy it was with a blend of herbs and a delicate balance of spices. Immediately, I came up with this recipe and wah-laa it was a hit. Every tomato popped in the mouth burst with flavor and the juices from the tomato just filled the mouth. It was fantastic and a perfect refreshing appetizer for any summer day.

Recipe: (For 4 people)

Approx. 25 cherry tomatoes
2 -3 cloves of garlic finely crushed
1 small onion finely chopped
1 tsp of dry basil
1 tsp oregano
1 tsp dill
1 tsp parsley
1 tsp red chili powder or per taste (optional)
1 tsp freshly ground black pepper
1 tbsp olive oil
Salt to taste


Cherry tomatoes in boiling water

Boil water and drop the cherry tomatoes in it to blanch. This will take approximately 5 -7 minutes or until you start noticing the skin peeling off from the tomato. Remove from water and run cool water over the tomatoes. In the meantime, heat olive oil in a skillet, add the garlic and onion and sauté. Add red chili powder, herbs, salt and pepper. I used all dry herbs, make sure to crush the herbs to release it’s aroma. Add about < 1/4 cup water to the mixture, turn of the stove. This makes the sauce. When the tomatoes are cool, gently peel the skin of each tomato.

The juices might run out a little but don’t worry, you can collect it & use it in the herb mixture. Place the peeled tomatoes in a clean plate and pour the herb mixture on top and you are done. Garnish with fresh basil if needed. This is just so perfect for an appetizer and the juices ooze out with every bite. Give it a try and you will be glad you did.
