Meals in minutes

Did you know that meals could be served literally in just a few minutes? Yes, there are vegetables that cook in minutes and transform into a simple yet satisfying meal. Today I will share my recipe of one such vegetable, Turai as in Hindi or Ridge Gourd in English. Ridge Gourd has a thick touch skin but tender from inside and leaves water when cooked. So you do not have to add water while cooking this vegetable.

Turai

Ingredients:

2 lbs ridge gourd (about 4 - 5)
Masala
1 tbsp oil
1 tsp of black mustard seeds
Pinch of Hing (Asafoetida)
Salt to taste
Cilantro chopped

Peel the skin of the ridge gourd. Save it for Ridge gourd chutney recipe. Dice the ridge gourd into pieces.

Turai pieces

In a pan, add oil. When the oil is hot, add the mustard seeds and asafoetida. Now add the masala. Add all the cut vegetables. mix well, cover it for just 2 - 3 minutes. The ridge gourd will cook in its own water it releases. Add salt and garnish with chopped cilantro. Serve hot with Chappatis or Rotis or Naan bread or Tortillas.
