Variety Salad

Posted by 365DaysVeg on October 29, 2007

Salad is an every part of our meal consisting of mixed vegetables and/or fruits ranging from fruits such as Pomegranate, Oranges, Apples to vegetables such as Broccoli, Brussels Sprouts, Carrots and more. The combination of these is only limited by your imagination.

Studies have shown that consuming salads consistently leads to higher levels of certain nutrients in the bloodstream and that eating just one serving of salad or raw vegetables per day significantly boosts the likelihood of meeting the recommended daily intake of certain nutrients. Amazing!

Having said all these we make sure to incorporate salad everyday in our diet. Today I made salad with a variety of vegetables and fruit hence the name Variety Salad.

Variety Salad

Ingredients:

1 Carrot grated
6 -8 Brussels Sprout
10 - 12 florets of Broccoli
1/2 cup pomegranate
1/4 cup Onion Sprouts (Optional)
1/4 cup chopped red Bell Pepper
1 tsp freshly ground black pepper
Salt to Taste
2 tbsp olive oil (Optional)

Cut the Brussels sprouts into half. Core the center hard part. In a vegetable steamer, place the broccoli florets and the Brussels sprout and steam. If you do not have a steamer, you can simply place them in a vessel with some holes. Then heat water in a sauce pan and place the vessel with vegetables on top.

Broccoli and Brussels Sprout steaming

Cover with a lid and let it steam for about 5 - 7 minutes or until the broccoli and Brussels sprout are done yet crunchy. Let it cool.
Now, mix all the vegetables and fruits pour some olive oil, salt and pepper. Toss and Serve.

Tip: Crumble in some feta cheese for a tangy flavor and some dressing of your choice or use chaat masala to get that Indian touch
